Kalamata olives are often known as the Greek olive. They are distinctive in taste and appearance from other black olives. Kalamata olives are deep, rich aubergine in colour. The flesh to pip ratio is also much higher than most cultivars. Hillcrest Kalamata olives are handpicked and then matured through a slow fermentation process for 9-12 months and then bottled on the Estate.
