Atlantic Slopes Sauvignon Blanc 2019
Metamorphic Range – Flagship Wine
The Atlantic Slopes Sauvignon Blanc is a blend of two blocks of Sauvignon Blanc that differ in elevation, soil type, aspect, and yield. Adding to the layered complexity and structure. It is a lively wine that displays a beautiful hue, with abundant citrus fruit on the nose. Fresh lime and lemon notes with a distinct minerality coming through on the palate. The 5% Semillon adds body and softens any Sauvignon’s acidity.
A lovely complex wine that will benefit from further aging of up to 5 years.

SB11H & SB316 on Rootstock Richter 110
HARVESTED:
The Sauvignon Blanc was harvested on 24th Feb & 13th March and the Semillon on 12th March 2014.
DEGREE BALLING:
Varied between 23.1˚ & 23.8˚
FERMENTATION:
The two blocks were fermented separately at 12˚C using two different yeasts to produce a mix of typical Sauvignon Blanc flavours. Fermentation lasted 18 days. The wine was kept on the lees, bottled on the 15th May 2014. Only 1300 bottles were produced.
