Wine

The winery vinifies between 40-50 tons of grapes per year which equates to approximately 3000 x 12 bottled cases evenly split between white and red wines. Before fermentation red grapes are cold soaked to extract maximum colour and varietal flavour. White wines remain on the gross lees for up to 72 hours before cold fermentation is initiated. Different commercial yeasts are used to liberate a variety of fruit flavours to enhance wine complexity. Red varieties undergo regular juice pump overs before the start of fermentation. After malolactic fermentation is complete the wine is racked into new & second fill French Oak barrels for further maturation.

Two ranges of wine are produced. The entry level Hillcrest Range comprises a Sauvignon Blanc, Chardonnay, Rose and lightly oaked red blend. The flagship or Metamorphic Range includes Quarry a Merlot & Hornfels a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot which varies from year to year depending on the quality of the blending components. Both these wines spend 18 months in new and second fill 225L French oak barrels. After blending and a light filtration the wines are bottled and matured for a further 12 months before release.

Hillcrest is a registered Estate and as such the wines express a sense of place as only grapes grown on the farm are vinified. Generally the white wines have a lime/citrus flavour and zesty natural acidity while the red wines are medium bodied, elegant with powerful fruit expression and a memorable persistence. Alcohol concentrations tend to be at a lower less intrusive level. While some of the wines receive regular 4 star ratings in the Platter Wine Guide and silver & bronze medals at the annual Veritas wine competition its greatest achievement was wining the Grand Roche Trophy for the best Merlot at the 2007 Old Mutual wine show.
