Metamorphic Range – Flagship Wine

 

BORDEAUX BLEND:

30% Cabernet Sauvignon, 10% Merlot, 40% Cabernet Franc & 20% Petit Verdot.

ANALYSIS:

Alc: 13.71%  RS: 2.7 gl  TA: 5.9gl   pH: 3.56

Saturated purple/red colour. Striking nose of spring flowers & crushed chalk, contributed by the Cabernet Franc. Fresh with decadent ripe fruit & seamless tannins. A unique style that emphasises the contribution made by the three lesser known varieties of a Bordeaux blend. Superb fruit concentration & well delineated finish. Will drink well for another decade.

SOIL TYPE:

Well drained Hutton & Glenrosa

VINEYARD:

Cabernet Franc, Malbec & Petit Verdot vines; 1.4 hectare block, 300 meters above sea level. Merlot & Cabernet Sauvignon lower altitude taking advantage of warmer ripening conditions.

VINIFICATION:

Grapes handpicked & sorted. A 2 to 3 day cold soak at 12 – 15°C ensured max colour extraction in a non-alcoholic environment

FERMENTATION:

Early fermentation; regular pumpovers & punchdowns were done to aid flavour & tannin extraction. After malolactic fermentation, wine was racked into new & 2nd fill 225L French oak barrels. After 9 months the most flavoursome barrels were selected, blended & returned to oak for a further 9 months.

The Metamorphic Range was launched in 2008 to highlight the geological history of the estate and the positive influence of these events of the flavour and structure of the resultant wines. Millions of years ago the deposition by water of silt, sand and mud formed the Malmesbury series. Rising magna baked the underlying shale to “Hornfels” a hard fine grained brittle rock. Over time folding, weathering and erosion exposed the bedrock where the vineyards are now planted. Cool ripening conditions in conjunction with the geology have a created a “terroir” unique to Hillcrest Estate.
