The mission cultivar originates from California and is a very versatile cultivar. These olives can be processed as Green Mission or Black Mission – this will depend at what ripeness the olives are picked. Mission olives are also very well known for making olive oil if picked at the correct ripeness. Our Black Mission olives are handpicked during the months of May and June at optimum ripeness then matured in brine 9 – 12 months before bottled. Perfect with a glass of Hillcrest wine.
