Metamorphic Range – Flagship Wine
Alc: 13.5% RS: 1.9gl TA: 7.2gl pH: 3.07
A blend of 2 blocks of Sauvignon Blanc that differ in elevation, soil type, aspect & yield. A true “terroir wine” as only grapes from Hillcrest Estate were vinified. A lively greenish yellow wine with abundant citrus fruit on the nose. Fresh lime / lemon flavours with a distinct minerality. The 5% Semillon adds body and softens any rasping acidity.
Will improve over the next 2 – 3 years.

SB11H & SB316 on Rootstock Richter 110
The Sauvignon Blanc was harvested on 24th Feb & 13th March and the Semillon on 12th March 2014.
Varied between 23.1˚ & 23.8˚
The two blocks were fermented separately at 12˚C using two different yeasts to produce a mix of typical Sauvignon Blanc flavours. Fermentation lasted 18 days. The wine was kept on the lees, bottled on the 15th May 2014. Only 1300 bottles were produced.
